Recipes from Acadiana | Banana Cake

Another tasty recipe in a series from my friend Elizabeth. This one involves bananas + cake, and cream cheese frosting. Need I say more?

I n g r e d i e n t s
1 box white cake mix
4 jumbo eggs
1 cup canola oil (canola or grapeseed)
1 tsp vanilla extract

M i x, t h e n a d d t h i s:
5-6 bananas, smashed
1 tsp baking soda
1 cup pecans

R e c i p e
Put in two 8 or 9-inch baking pans. Bake at 350 degrees for 25-28 minutes, until toothpick comes out clean. Let cool and cut into four layers.

C r e a m C h e e s e I c i n g
2 boxes cream cheese
1-1 1/2 boxes powdered sugar
1 tsp vanilla
1 cup pecans
Add a splash of milk if too thick

Layer with icing, and dig in!
