Hubigs Ice Cream | Recipe

Oh yes we did.

Chad had been racking his brain for a couple of weeks with what to do for our 4th anniversary when I stepped in with, "Let's do nothing. Nothing but eat in our pjs." (the adult in me knows we're on a tight budget because of this hiatus.) So eat in our pjs we did. We got home from work, threw on comfy clothes, grilled steaks, and made homemade vanilla ice cream. We thought about maybe throwing some peaches in. But then didn't. Fruit? Nah, not this time. We had to do this ice cream batch some justice, something fit for laying on a sofa & watching 'So You Think You Can Dance.' So we chopped up a few Hubigs fried apple pies and mixed 'em in. Divine. Here's how we did it:

I n g r e d i e n t s:
2 eggs
1 cup sugar
1 (12-ounce) can of evaporated milk
1/2 can sweetened condensed milk
1/2 tablespoon pure vanilla extract
Whole Milk
3 Hubigs fried apple pies

D i r e c t i o n s
Chop your Hubigs pies and set them aside. We used 3 pies and did a rough chop on them. Then cream the eggs + sugar with an electric mixer. Add the evaporated milk, condensed milk & vanilla. Beat the mixture until well blended. Pour the mixture into your electric ice cream maker (we have this Cuisinart - fabulous). Add whole milk to fill half way between your ice cream mixture & the top of your machine insert. Then turn the machine on. The ice cream will start to harden after about an hour.

Once it's thickened, turn the machine off, and transfer the ice cream to a freezer-safe container. Fold in the chopped Hubigs and voila. You're done. Grab a big ol' bowl, two big spoons, and enjoy.

  1. Oh sheesh, that sounds so utterly decadent and delicious. I stay away from Hubig's because I made the mistake of reading the nutritional information once and I've regretted it ever since. This post is making me want to rush down to the grocery store and grab one!

I also like the juxtaposition of the pie with the organic milk in the background. It pretty much sums up the way I eat too.
