Sauteed Fruit Parfait | Recipe

I was recently at a girlfriend's for breakfast where she served sauteed fruit over Greek yogurt. And although fruit & yogurt alone is such a traditional treat, I found myself devouring the entire cup like I had never tasted anything like it before. Sauteing the fruit was unexpected - this was definitely the sophisticated big sister of the plain-Jane ordinary yogurt parfait. So I tried my own version- pineapple Greek yogurt + stawberries & blueberries. You can really create any version you like using your favorite flavored yogurt & fresh fruits.

I n g r e d i e n t s:
Pineapple Greek Yogurt
Handful of Strawberries
Handful of Blueberries
Honey

Saute the fruit over medium heat for 2-3 minutes in a non-stick pan. Right before taking the fruit off the heat, gently mash down on the fruit with the back of a spatula to release the juices and stir. Let the fruit cool for a few minutes. Pour half the mixture in the bottom of a bowl (I used small mason jars), scoop the yogurt on top, and pour the remaining fruit mixture on top. If you need a bit of sweetness, a drizzle of honey is nice.
